Bell Peppers
Sweet bell peppers are native to tropical America and are related to pimentos,
and cayenne, but not to the white and black peppers from the Orient.
- Choose unblemished peppers which have
a glossy medium to dark green color. They should be relatively heavy
for their size and have firm walls or sides. Peppers which are to be
stuffed should be chunky so they will not tip over.
- Wash and dry peppers. Store them in the
vegetable crisper or in plastic bags in the refrigerator. Use peppers
within one week.
