MAXIMUM HOT WATER TEMPERATURE FOR HAND SINKS IN COMMERCIAL KITCHENS
The Board of State Examiners of Plumbers and Gas Fitters (“Board”) has voted to interpret the language in:
248 CMR, 10.14 (3) (a)
- Lavatory faucets in public toilet facilities shall:
.b. Be equipped or installed with devices which limit the outlet temperature to a maximum of 110 degrees Fahrenheit.
It is the interpretation of the Board that commercial kitchens are not considered “Public” and therefore, the outlet temperature for hand sink faucets in commercial kitchens are not required to have an outlet temperature of 110 degrees. The Board will allow a maximum temperature of 120 degrees Fahrenheit
Hand sinks in commercial kitchens are only used by employees. These employees are typically washing and rinsing pots and pans in pot sinks which could have 140 degree water. Those pot sinks, in some kitchens are located right next to the hand sinks.
